We are always looking for new ways to spice up breakfast, and this week we have the perfect recipe for you to try on those busy mornings! This recipe caught our eye because it was quick, easy, AND healthy! The perfect trifecta! We based the recipe off the one found on TornadoughAlli.com.
¼ tsp Cayenne Powder
½ tsp Red Pepper Flakes
2 Pieces of Bread
Salt & Pepper
¼ cup Cheese (optional)
Start off by mixing the avocado, lime juice, cayenne powder, and red pepper flakes together in a bowl. Mash it all together to make a guacamole-type mixture.
Next, toast your two pieces of bread and spread half of the guacamole mixture on each slice. We went with a multi grain bread for that extra health kick!
Then the eggs, you can cook your eggs to preference, but we chose to scramble them like the original recipe. (Next time we might try sunny side up!)
Finally, put it all together by placing the eggs on top of the avocado mix, sprinkle on some cheese, salt and pepper to taste, and top it off with your desired amount of salsa! For those who are lactose intolerant, or are trying to cut dairy out of their diets, the cheese is totally optional.
